With over 35 years in the culinary industry, John Casey has built an extraordinary career from world-class kitchens to pioneering foodservice innovation. His journey began with an apprenticeship at Melbourne’s iconic 5-star Southern Cross Hotel before representing Australia at the Culinary Olympics in Germany, winning Super Gold at the Junior World Championships. He honed his craft at legendary Stephanie’s Restaurant and Michelin-starred kitchens across Ireland and Europe.

Returning to Australia, John served as Executive Chef at Melbourne’s exclusive Lyceum Club, before his entrepreneurial spirit led him to found Dineamic Australia, a national ready-meal business focused on nutritionally-tailored solutions for elite athletes. He then applied his innovative vision to a critical mission: revolutionising food quality in the retirement and aged care sector.
 
As the National Food Services Manager for one of Australia’s largest retirement groups, John was instrumental in transforming dining standards across 92 communities, serving over 13,000 residents. He established an innovative 5-star hospitality framework that fundamentally improved the quality of life for residents. More recently, he founded a successful business providing premium ready meals specifically for the home care and aged care sectors.

John is also the author of “Live Life Cook” and creator of a video series with Nutrition Professionals Australia, establishing him as a leading advocate for age-appropriate nutrition. He currently serves as the Director of Culinary Studio and is part of an advisory committee at the William Angliss Institute, where he continues to influence and shape new standards for foodservice in this sector. His career is defined by a unique fusion of classical expertise and pioneering innovation, grounded in the belief that everyone deserves quality, delicious, and nutritious food.
