Tim’s influence & philosophy is shaped by working along side Ruth Rogers and Rose Gray at the famed River Cafe, London & Gordon Ramsay and Angela Hartnett of Menu at The Connaught Hotel, London and Guy Grossi of Grossi Florentino, Melbourne. Tim has held Executive Chef & Catering Operations Manager positions in Australia’s leading winery restaurants such as All Saints Estate, Wahgunyah & De Bortoli Wines in the picturesque Yarra Valley.
He’s been featured in many local and national publications such as ‘Gourmet Traveller’s Restaurant Guide’, ‘The Age Good Food Guide’ and ‘ The Age Epicure’ as well as various radio gigs such as covering Bob Hart’s 3AW food segment & guest chef on the television series ‘Mercurio’s Menu’ as well as ‘The Food Trail’, ‘Huey’s cooking adventures’ and Womans Weekly ‘Fresh’ with Lyndey Milan, amongst others.
Tim currently operates his company TK Restaurant Consulting with his team, specialising in new restaurants, cafes, quick serve restaurants & co-manufacturing facilities as well as helping restaurateurs & their teams develop the food scene & realise their vision.
