I was trained in Italy and worked extensively throughout Europe. After a two year as a chef on a prestigious cruise liner, I returned to Italy to work in various Michelin star restaurants. Representing the Italian Podere Castorani Winery in Australia and introducing the wines of former Formula 1 Driver, Jarno Trulli to the country.
Then by establishing Gran Sasso Ristorante Italiano in Melbourne. Since it’s opening in 2004, the quality and presentation of Gran Sasso’s dishes has led to write ups in The Age Good Food Guide for 3 years running and also receiving 2nd place in the Barilla Best Italian Restaurant Award issued by the Restaurant & Catering Victoria Association.
My passion and commitment to continuously promote and represent Italian Cuisine and implement the standard of hospitality industry in Australia has brought me to take on the position as Executive Chef for Australian owned magazine Italianicious. I also establish two new operations, Italian Table, a boutique cooking school for food lovers with access to the most rare and unique ingredients available on the market and DAMA Partners Consulting, a consulting division providing broad range of hospitality services to the industry as well as having two cook books and a food radio program in the pipeline.
I recently launched Pastry Revolution for Australasia and manage the Australia National Pizza Team.
